Anisbredele

In the Alsatian tradition, I present to you today the Anisbredele (small anise biscuits).

A pure delight for lovers of biscuits with the good taste of anise.

Oven power: 180°C (Th 6)

Ingredients

  • 2 2 eggs

  • 165 g 165 sugar

  • 170 g 170 flour

  • 8 g 8 anise seeds

Preparation of the Anisbredele :

  • Crack the eggs into a saucepan and add the sugar. Heat and mix with a whisk until the mixture reaches a temperature of 50°C. (This operation can be done in a Kenwood-type heating robot or with a cooking thermometer).
  • Pour this mixture into a bowl and whisk for about 10 minutes. (Variation: without heating, whisk the eggs with the sugar for 25 minutes.)
  • Add flour and anise.
  • Using a pastry bag (or a teaspoon), pipe small circles onto an oiled or lined baking sheet.
  • Leave the Anisbredele to crust in a warm, dry place for about 6 hours.
  • Preheat the oven to 200°C (Th 7), then bake for 10 minutes.
  • Leave the petit fours to cool on a wire rack, then keep them in a box so they can be enjoyed until Christmas.
